Parsley is a biennial herb (Petroselinum) usually grown as an annual. Its many horticultural varieties are grouped as curled leaved (var. crispum), fernleaved (var. filicinum) and Hamburg or "rooted" (var. radicosum). Organic varieties of parsley are available. Heirloom Parsley is also available.

Ideal Location-
Parsley prefers a partially shaded location with fertile moist soil. However this hardy herb can tolerate poor badly drained soil. This herb makes a good container plant. It is often planted in flower gardens where other plants cannot grow .

Cultivation-
Parsley seeds germinate slowly (some varieties can take several weeks). Soaking the seeds in warm water the night before sowing will help them germinate quicker. When growing outdoors plant in early spring. Sow the seeds thinly. Since the parsley seeds are so fine you can just place on top of the soil and water. The rows should be 10-12in. (25-30cm) apart. Later thin plants to stand about 6in (15cm) apart. Keep soil moist and well watered.

Care and Maintenance-
The following spring remove the flower stems as fast as they appear so as to keep the plants producing leaves until those grown from a newly sown crop are ready.

Harvesting -
The leaves may be cut all season for use as needed. In the fall they may be dried and stored in tight jars, or roots may be transplanted into pots or Hydroponic planters to be grown indoors. Parsley grown indoors requires at least five hours of sunlight a day

Culinary Uses- Curly parsley is most commonly used as a garnish. Italian parsley, which has a stronger flavor, is used to flavor soups, sauces, stews, pesto, vegetables and fish dishes. The herb can be used fresh or dried. Hamburg parsley is actually a vegetable and is cooked like parsnips.

Externally, make an Oil of Parsley leaves and roots to repel head lice, and try making an Ointment for use on swellings.
